Person(s)
  • 2
    Ripe bananas
  • 1½ cup
    Plain Greek yogurt
  • 2 tbsp
    Honey
  • 1 tsp
    Vanilla Extract
  • 1/3 cup
    Dark chocolate chips
  • 1 tsp
    Coconut oil
  • 2 tbsp
    Chopped roasted peanuts
  • 2 tbsp
    Granola
  • 1 tbsp
    Unsweetened shredded coconut
  • pinch
    Sea salt
Directions
  • Prepare the yogurt base

Line a small baking sheet, tray, or freezer-safe dish with parchment paper. In a medium mixing bowl, whisk together the Greek yogurt, honey, and vanilla extract until smooth and well combined. Spread the yogurt mixture onto the prepared tray, forming an even rectangle about ¼ inch thick.

  • Add the toppings

Arrange the banana slices evenly over the yogurt layer, gently pressing them into the surface. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second intervals, stirring between each interval until smooth. Drizzle the melted chocolate over the bananas, then sprinkle the chopped peanuts, granola, shredded coconut, and a pinch of sea salt evenly over the top.

  • Freeze until firm

Transfer the tray to the freezer and freeze for about 2 hours, or until the bark is completely firm and frozen solid. This allows the yogurt to set and the toppings to adhere.

  • Break and serve

Remove the bark from the freezer and let it sit for 2–3 minutes to soften slightly. Break it into irregular pieces using your hands or a sharp knife. Serve immediately or store the pieces in an airtight container in the freezer until ready to enjoy.
