Directions
  • Prepare the Corn

    Shuck the corn and remove all the silk. Using a sharp knife, carefully cut each ear of corn in half crosswise. Stand each half upright and slice lengthwise into quarters to create rib-shaped pieces. This step requires a sturdy cutting board and a sharp knife, so work carefully.

  • Season the Corn

    In a small bowl, combine the melted butter, chili powder, smoked paprika, garlic powder, salt, black pepper, and lime juice. Brush the seasoned butter generously over every piece of corn, making sure all sides are evenly coated.

  • Grill the Corn Ribs

    Preheat the grill to 400°F over medium-high heat. Place the corn ribs directly on the grill grates. Cook for 12–15 minutes, turning every few minutes until the corn begins to curl and develops lightly charred edges. Brush with any remaining butter during the last few minutes of grilling.
