Ingredients
6
Person(s)
  • 2 cup
    Cottage cheese
  • 1 cup
    Shredded Cheddar Cheese
  • 1 tbsp
    Taco seasoning
  • 1 tsp
    Garlic Powder
  • 1/2 tsp
    Onion Powder
  • 1/4 cup
    Tomatoes with green chilies
  • 2 tbsp
    Milk
  • 1 tbsp
    Chopped Fresh Cilantro
  • 1
    Jalapeño
Directions
  • Blend the queso base

Add the cottage cheese, shredded cheddar cheese, taco seasoning, garlic powder, and onion powder to a blender or food processor. Blend for 1–2 minutes, stopping to scrape down the sides as needed, until the mixture becomes completely smooth, creamy, and free of any lumps.

  • Heat the dip

Transfer the blended mixture to a microwave-safe bowl and stir in the drained diced tomatoes with green chilies. Microwave in 30-second intervals, stirring after each interval, for about 2–3 minutes total, or until the dip is warm and the cheese has fully melted.

  • Adjust the consistency and flavor

If you prefer a thinner queso, gradually stir in the milk until the desired consistency is reached. Mix in the chopped cilantro and diced jalapeño, if using, to add extra freshness and heat.

  • Serve and enjoy

Serve the queso warm with tortilla chips, pretzels, crackers, or fresh vegetable sticks. It also makes a delicious topping for tacos, nachos, burrito bowls, or baked potatoes. Enjoy immediately while the dip is hot and creamy.
