Ingredients
6
Person(s)
  • 3 pound
    Sweet potatoes
  • 3 tbsp
    Unsalted butter
  • 3 tbsp
    Honey
  • 1 tsp
    Ground Cinnamon
  • 1/2 tsp
    Salt
  • 1/4 tsp
    Black pepper
  • 1 tbsp
    Olive Oil
  • 1 tbsp
    Chopped fresh parsley
Directions
  • Prepare the Sweet Potatoes

Preheat the oven to 425°F. Line a large baking sheet with parchment paper for easy cleanup. Peel the sweet potatoes and cut them into evenly sized 1-inch cubes so they cook at the same rate. Add the sweet potatoes to a large bowl and toss with olive oil, salt, and black pepper.

  • Roast Until Golden

Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded. Roast in the oven for 25–30 minutes, flipping halfway through cooking, until the potatoes are tender and the edges become golden brown and slightly caramelized.

  • Make the Honey Butter Glaze

While the sweet potatoes roast, combine melted butter, honey, and cinnamon in a small bowl. Stir until the mixture is smooth and evenly combined. Adjust the cinnamon amount based on your preferred level of warmth and sweetness.

  • Finish and Serve

Remove the roasted sweet potatoes from the oven and transfer them back to a large bowl. Pour the honey butter mixture over the warm potatoes and gently toss until every piece is coated. Serve immediately with a sprinkle of fresh parsley if desired.
