Ingredients

Person(s)
  • 3 cup
    Rolled Oats
  • 1 cup
    Almonds
  • 1/3 cup
    Honey
  • 1/4 cup
    Coconut oil
  • 1 tsp
    Pure vanilla extract
  • 1/2 tsp
    Ground Cinnamon
  • 1/2 tsp
    Salt
  • 1/2 cup
    Shredded coconut
  • 1/2 cup
    Dried cranberries or raisins
Directions
  • Prepare the Granola Mixture

Preheat the oven to 325°F. Line a large baking sheet with parchment paper. In a large mixing bowl, combine rolled oats, chopped almonds, cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

  • Add Honey and Coconut Oil

In a small bowl, mix melted coconut oil, honey, and vanilla extract until combined. Pour the honey mixture over the oats and nuts. Stir thoroughly until every piece is lightly coated.

  • Bake the Granola

Spread the granola mixture evenly across the prepared baking sheet. Bake for 25–30 minutes, stirring gently halfway through to help the granola brown evenly. Keep an eye on it during the final minutes because honey can cause the edges to brown quickly.

  • Cool and Create Clusters

Remove the granola from the oven and allow it to cool completely on the baking sheet. For larger crunchy clusters, avoid stirring while the granola is cooling. Once cooled, break it into pieces and mix in dried fruit or shredded coconut if desired.

  • Serve and Store

Serve your homemade granola with yogurt, milk, smoothie bowls, or fresh fruit. Store in an airtight container at room temperature for up to 2 weeks.
