- Cook the rice and brown the beef
Cook the jasmine or short-grain rice according to the package directions and keep it warm. Meanwhile, heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon, until fully browned and cooked through. Drain any excess grease if needed.
- Prepare the Korean-style sauce
Add the minced garlic and grated ginger to the skillet and cook for about 1 minute until fragrant. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar, black pepper, and red pepper flakes, if using.
- Simmer the beef
Pour the sauce into the skillet and stir to coat the beef evenly. Simmer for 2–3 minutes, allowing the sauce to slightly thicken and the beef to absorb the sweet and savory flavors.
- Assemble and serve
Divide the warm rice among four serving bowls. Spoon the Korean-style beef over the rice, then top with shredded carrots and sliced cucumber. Garnish with green onions and sesame seeds before serving for added freshness and crunch.
