    Full-fat cottage cheese
  • 2 large
    Egg
  • 1/2 tsp
    Garlic Powder
  • 1/2 tsp
    Italian seasoning
  • 1/4 tsp
    Onion Powder
  • 1/4 tsp
    Black pepper
  • 1 tbsp
    Grated Parmesan cheese
Directions
  • Prepare the Oven

    Preheat your oven to 350°F. Line a quarter-sheet pan or baking tray with parchment paper and lightly spray it with nonstick cooking spray.

  • Blend the Batter

    Add the cottage cheese and eggs to a blender or food processor. Blend for 30–60 seconds until completely smooth. If using optional seasonings, blend them in at this stage.

  • Bake the Flatbread

    Pour the batter onto the prepared baking sheet and spread it into an even rectangle about ¼ inch thick. Bake for 30–35 minutes, or until the edges are lightly golden and the center is fully set.

  • Cool and Slice

    Remove the flatbread from the oven and let it cool on the pan for 10 minutes. Carefully peel away the parchment paper before slicing into squares or rectangles.

  • Serve

    Enjoy immediately as a wrap, sandwich bread, pizza base, or dipper for soups and salads. You can also roll it around turkey, grilled chicken, fresh vegetables, or your favorite sandwich fillings.
