- Prepare the Marinade
In a large bowl, whisk together the barbecue sauce, honey, bourbon, olive oil, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper until smooth. Add the chicken cubes and toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
- Assemble the Skewers
If using wooden skewers, soak them in water for at least 30 minutes before grilling. Thread the marinated chicken pieces evenly onto the skewers, leaving a small space between each piece to help them cook evenly. Reserve a few tablespoons of fresh barbecue sauce for brushing during grilling.
- Grill the Chicken
Preheat the grill to Medium-High Heat (400°F) and lightly oil the grates. Place the skewers on the grill and cook for 10–12 minutes, turning every 2–3 minutes. Brush with additional barbecue sauce during the final few minutes of cooking until the chicken is caramelized and reaches an internal temperature of 165°F.
- Rest and Serve
Transfer the skewers to a serving platter and let them rest for about 5 minutes. Sprinkle with chopped fresh parsley if desired and serve hot with grilled vegetables, rice, coleslaw, or corn on the cob.
