    Rotini or penne pasta
  • 8 ounces
    Block feta cheese
  • 4 cup
    Cherry tomatoes
  • 1/4 cup
    Extra virgin olive oil
  • 3
    Cloves garlic
  • 1 tsp
    Italian seasoning
  • 1/2 tsp
    Crushed red pepper flakes
  • 1/2 tsp
    Kosher salt
  • 1/4 tsp
    Black pepper
  • 1/4 cup
    Chopped fresh basil
  • 2 tbsp
    Chopped parsley
  • 1 tbsp
    Fresh lemon juice
Directions
  • Prepare the Baking Dish

    Preheat your oven to 400°F. Place the block of feta in the center of a baking dish. Surround it with the cherry tomatoes. Drizzle everything with olive oil, then sprinkle on the garlic, Italian seasoning, salt, black pepper, and red pepper flakes if using.

  • Bake the Feta and Tomatoes

     

    Bake for 30–35 minutes, until the tomatoes have burst and the feta is soft and lightly golden. Meanwhile, cook the pasta according to the package directions until al dente. Drain and rinse under cold water to cool completely.

  • Make the Creamy Dressing

    Remove the baking dish from the oven. Using a spoon, mash the roasted feta together with the softened tomatoes until a creamy sauce forms. Stir everything together until smooth.

  • Assemble the Pasta Salad

    Add the cooled pasta to the baking dish and gently toss until evenly coated. Fold in the chopped basil, parsley, and lemon juice if using. Taste and adjust the seasoning as needed. Refrigerate for at least 20–30 minutes before serving for the best flavor.
