- Prepare the Oven and Ingredients
Preheat the oven to 400°F. Place the cherry tomatoes in a large baking dish. Add minced garlic, olive oil, salt, black pepper, dried oregano, and red pepper flakes. Toss everything together until the tomatoes are evenly coated. Place the block of feta cheese in the center of the tomatoes and drizzle a little extra olive oil over the top.
- Bake the Feta and Tomatoes
Bake uncovered for 30–35 minutes until the tomatoes burst and release their juices, while the feta becomes soft and creamy. The roasted tomatoes will create a flavorful base, and the melted feta will be ready to turn into a smooth pasta sauce.
- Cook the Pasta
While the feta mixture is baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Before draining, reserve about ¼ cup of pasta water. Drain the pasta and set aside.
- Combine Everything Together
Remove the baking dish from the oven and gently mash the roasted tomatoes and feta together using a spoon until a creamy sauce forms. Add the cooked pasta and toss until every piece is coated with the feta tomato sauce. If the sauce is too thick, add a small amount of reserved pasta water until you reach your desired consistency.
- Finish and Serve
Stir in fresh basil leaves and adjust seasoning if needed. Serve the pasta warm with extra basil, cracked black pepper, or a sprinkle of Parmesan cheese if desired.
