Directions
  • Cook the taco meat

    Heat the olive oil in a large skillet over medium-high heat. Add the ground beef or turkey and cook for 6–8 minutes, breaking the meat into small crumbles as it browns. Drain any excess fat if necessary, then stir in the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the water and simmer for 2–3 minutes until the mixture is well seasoned and slightly thickened.

  • Prepare the bowl ingredients

    While the taco meat cooks, prepare the toppings by shredding the romaine lettuce, halving the cherry tomatoes, draining and rinsing the black beans, dicing the avocado, and finely chopping the red onion and cilantro. Have the cheddar cheese, corn, and lime wedges ready for assembling.

  • Assemble the bowls

     

    Divide the cottage cheese evenly among four serving bowls. Arrange the lettuce, tomatoes, black beans, corn, avocado, red onion, and shredded cheddar cheese around the cottage cheese to create colorful sections. Spoon the warm taco meat into each bowl.

  • Garnish and serve

    Sprinkle the bowls with fresh cilantro and serve with lime wedges on the side. Add optional toppings such as salsa, jalapeño slices, hot sauce, or crushed tortilla chips for extra flavor and texture. Serve immediately while the taco meat is warm.
