- Prepare the Chocolate Base
Line a small baking tray or loaf pan with parchment paper. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring between each, until completely smooth. Pour the melted chocolate onto the prepared pan and spread into an even rectangle about ¼-inch thick.
- Make the Hot Chocolate Layer
In a medium bowl, gently fold the hot chocolate mix into the whipped topping until fully combined. Spread the whipped mixture evenly over the melted chocolate.
- Add the Toppings
Sprinkle the mini marshmallows, mini chocolate chips, and crushed cookies evenly across the top. Drizzle with chocolate syrup if using and finish with a tiny pinch of flaky sea salt for extra flavor.
- Freeze the Bark
Transfer the pan to the freezer for at least 3 hours, or until completely firm. Once frozen, lift the bark out using the parchment paper.
- Break & Serve
Break or cut the bark into irregular pieces. Serve immediately straight from the freezer for the best texture, or let it sit at room temperature for 1–2 minutes before enjoying.
