Ingredients
4
Person(s)
  • 3 cup
    Cooked shredded chicken
  • 1 cup
    Cottage cheese
  • 1/2 cup
    Celery
  • 1/2 cup
    Red grapes
  • 2 tbsp
    Plain Greek yogurt
  • 1 tbsp
    Dijon mustard
  • 1 tbsp
    Fresh lemon juice
  • 2 tbsp
    Chopped fresh parsley
  • 1/2 tsp
    Garlic Powder
  • 1/2 tsp
    Onion Powder
  • 1/4 tsp
    Salt
  • 1/4 tsp
    Black pepper
Directions
  • Prepare the Chicken Salad Base

Add the shredded chicken to a large mixing bowl. Make sure the chicken pieces are evenly shredded so every bite has a good balance of ingredients. Add chopped celery and halved grapes to the bowl and gently mix everything together.

  • Make the Creamy Cottage Cheese Dressing

In a separate bowl, combine cottage cheese, Greek yogurt (if using), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and black pepper. Stir until the ingredients are well combined and creamy.

  • Combine Everything Together

Pour the cottage cheese mixture over the shredded chicken mixture. Gently fold everything together until the chicken is evenly coated with the creamy dressing. Avoid overmixing to keep the texture fresh.

  • Chill and Serve

For the best flavor, cover and refrigerate the chicken salad for 20–30 minutes before serving. Serve chilled on whole wheat bread, in a lettuce wrap, with crackers, or over a fresh salad.
