- Cook the Pasta
Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente. Reserve about ½ cup of pasta water before draining. Set the cooked pasta aside while preparing the sauce.
- Prepare the Tomato Garlic Base
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for about 30–60 seconds until fragrant. Be careful not to burn the garlic. Add crushed tomatoes, dried basil, oregano, salt, black pepper, and red pepper flakes if using. Simmer the sauce for 8–10 minutes, allowing the flavors to combine.
- Blend the Cottage Cheese Sauce
Add cottage cheese to a blender or food processor. Blend until smooth and creamy. Pour the blended cottage cheese into the tomato sauce and stir well until fully combined. Cook for another 2–3 minutes over low heat until the sauce is warm and creamy.
- Combine & Serve
Add cooked pasta directly into the sauce and toss until evenly coated. If the sauce is too thick, add a splash of reserved pasta water until you reach your preferred consistency. Top with Parmesan cheese and fresh basil if desired. Serve warm and enjoy.
