- Prepare the baking dish
Preheat your oven to 400°F (200°C). Add the cherry tomatoes, minced garlic, olive oil, oregano, basil, red pepper flakes (if using), salt, and black pepper to a medium baking dish. Toss everything together until the tomatoes are evenly coated. Place the block of feta cheese in the center of the dish, surrounded by the seasoned tomatoes.
- Bake the feta and tomatoes
Bake for 30–35 minutes, or until the tomatoes have burst and become soft and juicy and the feta is lightly golden around the edges. The roasted tomatoes and melted feta will create a rich, creamy sauce base.
- Cook the pasta and make the sauce
While the feta mixture bakes, cook the pasta according to the package directions until al dente. Reserve ½ cup of the pasta cooking water before draining. Remove the baking dish from the oven and gently mash the baked feta and tomatoes together with a spoon until a creamy sauce forms.
- Combine and serve
Add the cooked pasta to the baking dish and toss until evenly coated with the sauce. Stir in a small amount of the reserved pasta water if needed to loosen the sauce. Mix in the fresh basil, sprinkle with Parmesan cheese if desired, and serve immediately while warm.
